Roasting Process

Medium Roasts: Roasted to an internal temperature of 410°F to 428°F. This roast level achieves a balance between the bean's natural flavors and the roast's caramelly sweetness. Medium roasts are characterized by their medium brown color and lack of oily surface. Dark Roasts: Roasted to temperatures ranging from 464°F to 482°F. These beans are dark brown, often with an oily surface, and possess bold, rich flavors with pronounced roasted notes. Many people assume they prefer light roasts to avoid strong flavors. However, our medium and dark roasts offer a smoothness and depth that can appeal to those seeking a more balanced cup. For instance, our "Totality: Sumatra Mandheling Dark Roast" and "Blood Moon: Guatemala Antigua Dark Roast" are perfect examples of flavorful yet smooth options. Despite common misconceptions, pound for pound, the caffeine content in medium and dark roasts is similar to that of light roasts. The roasting process slightly reduces caffeine content, but the difference is minimal and typically not noticeable in a single serving. Preparation Methods

Once harvested, coffee cherries are processed using one of three methods: Dry (Natural) Process: Cherries are dried in the sun, enhancing fruity flavors. Wet (Washed) Process: Cherries are pulped and fermented to remove the mucilage, producing cleaner and brighter flavors. Honey Process: A hybrid method where some mucilage is left on the beans during drying, combining elements of both dry and wet processes. For our decaffeinated options, we use the Swiss Water Process, a chemical-free method that relies on pure water to remove caffeine from the coffee beans.
